Heat olive oil in a heavy saucepan over medium heat.
Add the chopped onion, carrot, and celery. Cook gently for 8 to 10 minutes, stirring occasionally, until softened and lightly golden. This slow cooking step builds depth in the sauce.
Add the garlic and cook for 30 seconds until fragrant.
Increase the heat slightly and add the beef mince.
Use a wooden spoon to break it up into small pieces. Cook until the beef is fully browned and no pink remains. If there is excess fat, carefully drain some off.
Stir in the tomato paste and cook for 1 minute. This removes any raw flavour and intensifies the tomato character.
Add the crushed tomatoes, beef stock, and oregano. Stir well and bring to a gentle simmer.
Reduce heat to low and allow the sauce to simmer gently for 1.5 to 2 hours. Stir occasionally to prevent sticking.
The sauce is ready when it has thickened, deepened in colour, and tastes rich and well balanced.
Bring a large pot of salted water to the boil. Add the pappardelle and cook until al dente according to packet instructions.
Drain and add directly to the sauce.
Toss the pasta gently through the ragu so it is evenly coated.
Serve hot with freshly grated Parmigiano on top.
