MAKE THE MARINADE

In a small bowl, combine olive oil, lemon zest, lemon juice, chopped herbs, garlic, salt, and pepper. Stir until well mixed. The aroma should be fresh and citrusy.

PREPARE THE FISH PROPERLY

Pat the barramundi dry with paper towel. Removing surface moisture helps the skin crisp up on the grill.

Brush both sides generously with the marinade. Let the fish sit for 5 minutes at room temperature while you heat the grill. This helps it cook evenly.

PREHEAT THE GRILL

Add the rice to the pan and stir well to coat each grain in the oil and butter. Cook for 1 to 2 minutes. The edges of the grains will look slightly translucent.
